How To Cook Colorful Jollof Coconut Rice.

Coconut Rice is one of the most popular food use to Serve visitor most, and there are two types of coconut rice, they are the colorful and the whiter one. It feels so good to see the good looking on your dining table, presenting to your FAMILIES, GUESTS or FRIENDS. By  Serving them first they would think is the normal Jollof Rice, but when they taste it, then you see the feeling in there face and they feel like they are in the Paradise Valley at that MOMENT.
Before I proceed, this content will have three main parts the HEADER, BODY, and FOOTER. the header part will talk about the INGREDIENTS, the BODY part will talk about the Preparation of the TOMATO STEW, CHICKEN, VEGETABLES, COCONUT MILK, and PARBOILING of the RICE. ETC........ And the FOOTER side is talking about the COOKING STEPS.
Easy steps to Cook Coconut Rice, color or white Coconut Rice. The colorful one remain it looked like the same as the normal Jollof Rice you popularly known,
but the taste, aroma and ingredients are much more different.
Want to surprise your family, friends, and guests, tell them you prepare what you are very good at as meal for them and invite them to the dining table, then Serve them, they will be looking at you while Serving them even the way you don't like but after Serving it and they take the first spoon, is like WAHOOOPPPOO..... then the pleasure is yours.
But now will love to first write on the colorful Coconut Rice, that looks similarly to the popularly known jollof rice. As times goes on I will be posting for the
other version of the coconut rice known as the White Coconut Rice.

 Now to the HARDER part ::::


INGREDIENTS;

* Get at least 4 Cigar Cups of long grain parboiled rice {750-g}.
* Tomato Stew.
* Coconut Milk.
* Barbecued Chicken or drumsticks.
* 4Teaspoonful of ground Red pepper.
* Salt.
* 1½ medium onions.
* 1¼ stock cubes.
* ½ tablespoon thyme.


Now to the body of the content.

Before proceeding you the cooking of your Coconut Rice you need to get the following prepared and ready.....

* Tomato Stew.
* Fry or Barbecue your chicken.
* Extractions of the coconut milk.
* Parboiled rice.

How To Make The "Tomato Stew".
1a. Get your cooker set up and place your cooking pot on it, then pour the fresh tomato which you've already blend, and heat it for like 10 to 15 minutes or till when the water almost get dried.

1b. If you are using the watery tomato paste, pour your oil into the pot first and live it for 5 minutes and pour the  watery tomato paste, and reduce the heat to low. Cook till the water in the tomato
Paste dried as much as possible.

2. Then add the following to your fresh tomatoes blend ;
* Vegetable Oil,
* Chopped fresh Onions,
And Stir very well.

NOTE ; you don't need step "2" if you are using "1b" step "2" is for the users of "1a"

3. Fry and stir at short intervals, and reduce your cooker to a very low heat
till the oil has completely flat on top from the tomato ground. if you have fry it very well, and have an irregular line left from smearing or motion of oil. Taste the  tomato stew to make sure that the raw tomato taste is are no more.
As time goes on and practice with challenges, you will be soon be an expert.

4. Now you are OK with the taste, your tomato stew is ready to use. If you are using it immediately, add it to your cooking. But if not used keep it cool at 20°c.

* How To Fry or Barbecue your chicken.

1. Chop up the whole chicken to desired pieces. If you like you might have asked the grocers or meatsellers should do this for you and save you the time.

2. Pot the chicken pieces, then chop the onions and add it with thyme and stock cubes and add to the chicken.

3. Note : don't add any amount of water to it, the chicken will drill out water itself. just cover the contents of the pot and start cooking.

4. Since it a hen, it would take some time cause of the tough, normally 15 to 20 minutes is OK on medium heat with a normal cooking pot to get it to done. Taking more than 15 to 20 minutes Depend on the heating capacity of your cooker. Also if you use a pressure cooker, it will take even much less time so keep an eye on it so that it doesn't get too soft. so should not think that because have say it should take 15 to 20 minutes you keep it up and be doing other things. It may get burn.

5. When the chicken is done, add some salt, cover the pot and leave to simmer for about 2 minutes. Adding salt at the beginning will make your chicken cook in more time because salt toughens the chicken and some other foodstuff

6. Pour the chicken to a sieve to drain.

7. Now get your chickens set on the oven rack, place the rack as close to the barbecue (the top heater in your oven) aspossible.

8. Switch on the oven to " barbecue " or "Broil" and set the temperature to 150°C or 350°F.

9. After 10 to 15 minutes the upper side might have turned brown, now you make the second turning of the pieces of chicken on the other side.

10. Now that the both sides of the chicken is well- barbecued and turn brown.

11. The second side can't take up to 10 to 15 minutes, just keep it for just 5 minutes.

* How To Extract The Coconut Milk.

It's absolutely a simple tweak if you follow the simple steps blow.

1. Burst the coconut and put it in a bowl to collect the coconut water. Although we  don't really need the coconut water and you may use it to blend it if you like or drink it. It even good for health.

2. Use knife or any other tools to remove the coconut meat.

3. Chop or Grate the coconut meat into smaller pieces.

4. Put the chopped coconut in a blender and add warm water or the coconut water to it.

5. Blend on high for about 5 minutes until the mixture is thick and creamy.

6. Pour your blend coconut into a sieve and use spoon to exact more pressure on it to filter out all the milk.

7. Now your coconut milk is ready to used or if not ready to use, store in
fridge for future use.

Now Set the coconut milk aside.
* How To Parboil Rice, Using This Simple Parboiling Method As Following :

1. Wash the rice in cold water (optional) and place in a pot.

2. Add water to it, adding water depends on the quality of the rice, or you can make it about twice the level of the rice.

3. Set fire to the gas cooker or the stove and leave to cook.

4. Note: when the water as boil to about 40°c then you can add your rice and to the boiling water and leave to Boil to 100°c plus 10 more minutes.

5. Pour it into a sieve to sieve out the water.

6. Place the sieve with the rice in a bowl of cold water of 0.0°c.

7. Then Rince the rice and pour into another bowl of cold water of 0.0°c
necessary.

8. Keep it in the sieve to drain off all the water.

9. Now that the water have drain off, your rice is now ready to be fully cooked again.

And now to the last but not the list, the FOOTER side is talking about the COOKING STEPS.

1. Now you need a big and accommodate pot to cook the rice. And set on your cooker or stove.

2. Pour the chicken stock, coconut milk and the tomato stew into the pot you have set on the cooker or stove to boil. After boiled for about 3 minutes, add your parboiled rice, salt, thyme,
and your ground Red pepper. And add water to the level of the rice. This is to ensure that all the water dries up by the time the rice is fully cooked.

3. Now cover up the pot and leave to cook. If you parboiled the rice as described above it shouldn't take more than 10 to 15 minutes to done, and with this, the rice won't get burn before the water dries up. After 10 to 15 minutes the rice should be done by the time the water is dry. Taste it to confirm. Now you have a Good, Deliciously coconut rice. And ready to Serve. Enjoy with Fried Plantain, Salad or Coleslaw.

Coconut is one of the most healthy food that has enough benefits. It use to
makes delicious dishes. Such as coconut oil, coconut milk, coconut water, coconut flour, coconut flakes. And today it being used in home kitchens, ceremonies, restaurants and packaged foods. That why I always have some coconut in my kitchen. Coconut milk is not only use to cook rice, you can add to your breads and cakes. The more your research on Coconut milk, the more you see a lot of recipes using coconut milk for. Some even use the Coconut milk for white juice. Coconut milk can be thin or thick. Thick coconut milk is the milk that is strained after blending it, and when warm water is added to the thick milk, this is known as the thin coconut milk. And if you keep your coconut milk to settle down, then coconut cream separates from the milk and rise on top.

Things you need to Extract the milk from the coconut.

GRATER,

WATER, or you may use the COCONUT WATER.

BLENDER.

SIEVE.

or

CHEESE CLOTH.

INGREDIENTS and TOOLS needed.

FRESH COCONUT.

"HAMMER" to BREAK the COCONUT.

KNIFE.

Normal WATER or COCONUT WATER.

There's always saying about White Coconut Rice and Jollof Coconut Rice. That the White Coconut Rice is much more delicious then the Jollof Coconut Rice. Uhmmmmm... Stop thinking that  because they are both delicious. Prepare the two of them and decide which is best for you and make it your favorite. In many occasions, White Coconut Rice is much used then the Jollof Coconut Rice. Cause if you serve most people the Jollof Coconut Rice in any occasion, they won't believe that you are serving them with Coconut rice. That why most people say the White Coconut Rice is more better than the Jollof Coconut Rice which I will always dispute.

Now to the header of the content.

INGREDIENTS ;;;

* Long grain parboiled rice.
* Coconut Milk.
* Chickens stock/broth.
* 10 Small Shrimps.
* Tatashe Pepper. [optional]
* 2 White Onions.
* Two teacup of Diced Sausage.
* Seasoning Cube.
* Fresh Peppers [Habanero peppers].
* Green Pepper.
* Salt.
* Green peas.
* Green beans.

Things you have to Notes about the INGREDIENTS.

* Why the long grain parboiled rice is always best for your Jollof Rice, Jollof Coconut Rice, White Coconut Rice or White Rice and Stew, is because it not stick together. It's the best rice for all types of RECIPES.

* Using coconut milk you extracted by yourself is much more better than using the manufacture ones. If you don't know how to Extract Coconut milk Read it now "How to Extract Coconut Milk".

* Seasoning cube is to me is optional because is already added to your cooking when preparing the chicken stock/broth.

* The green ingredients (peas, peppers and beans) are for colour. So using any green ingredients add nothing to your meal but it makes it colorful.

* If you wanna have a completely White Coconut Rice without no point of colour, then you don't have to add any ingredient
that transform colour. Which means you have to boycott the tatashe peppers and sausage.

Before you proceed the cooking of the White Coconut Rice, get this set.

* Get ready your chicken stock.

* If you have already extracted Coconut milk in your freezer, bring it out but if you don't get your Coconut set for the extraction of the milk.

* Parboil the long grain rice.

How To Parboil The Long Grain Rice, Using This Simple Parboiling Method As Following :

1. Wash the rice in cold water (optional) and place in a pot.
2. Add water to it, adding water depends on the quality of the rice, or you can make it about twice the level of the rice.
3. Set fire to the gas cooker or the stove and leave to cook.
4. Note: when the water as boil to about 40°c then you can add your rice and to the boiling water and leave to Boil to 100°c plus 10 more minutes.
5. Pour it into a sieve to sieve out the water.
6. Place the sieve with the rice in a bowl of cold water of 0.0°c.
7. Then Rince the rice and pour into another bowl of cold water of 0.0°c
necessary.
8. Keep it in the sieve to drain off all the water.
9. Now that the water have drain off, your rice is now ready to be fully cooked again.

Note : before you can agree that your rice is fully OK with the parboiling, you should be able to cut the grain of rice with your finger nails.

* Chop up all your sausages into smaller pieces.
* Chop your Fresh Peppers [Habanero peppers]and the Green Pepper.
* Chop your Green Beans into
Uniform sizes of about ½ inch long.
* Chop your onions to a circular form.
* Parboil your shrimps and peel them.

DIRECTIONS ::

1. Get your cooker or stove set, then clan your pot and place it on the cooker or stove then pour the chicken stock and coconut milk into the pot. Have it at the back of your mind that the rice will rise by one quarter of its quantity from the state of parboiled, to the state it done.
2. Now get your green pepper and seasoning cube add them to it and cover the pot, live it to start cooking till it boils 80°c.
3. Add your parboiled rice to it, then add salt and Stir together. Note; your Coconut milk level should be the same with the rice level. If is not, top it up with coconut milk if you still have some, but if you don't add water. But note the more water you add it reduces the coconut milk taste. So it better you have enough Coconut milk. If the coconut milk level is much more than the rice level, your coconut rice will end up with soggy.
But if you have used long grain parboiled rice and you have done the parboiling probably, then you will have your Coconut Rice done by the time the coconut milk dries up.
4. Cover your pot and allow to cook, once it boils, add the sausage. The sausage needs to be cooked but if you are using other types of sausage that does not need much cooking, such as hotdogs and others, add it in the next step.
6. When the coconut milk is getting dries below the level of the rice, add the shrimps. If you have not added your sausages in step 5 it means you are using other sausage that doesn't need much cooking, add it and continue cooking.
7. Now if the water is almost dry, add the following ingredients:
Onions,
Green Beans, 
Green Peas,
The Tatashe,
Habanero Peppers.
Cover and continue cooking till all the coconut milk dries up. If your rice is probably parboiled, it should be doen by then.
9. Stir with a wooden spoon till all the ingredients are well mixed.
That's all. Now your White Coconut Rice is ready to serve. If you can prepare your White Coconut Rice with all these ingredients listed above, even add more that is not listed. You will enjoy it.
