Today in the most part of the world, Jollof Spaghetti is a quick, simple and easy meal. Jollof Spaghetti is quite easy to prepare and can be cook in different ways, it can be cooked with or without vegetables, it can be cooked in form of Jollof or cook ordinary and eat with stew or sauce. And it can't serves more than 2 to 3 person.

INGREDIENTS :

* 1 Pack of Spaghetti.
* 2½ Cooking Spoonful Tomato Sauce or Stew, or Chicken Stew or Beef Stew.
* 150 to 200 ml of Meat or Chicken or Fish stock. To substitute
water.
* 2 Carrots.
* 1½ Teacup of Green Beans.
* 2½ Runner Beans. (optional).
* ½ Teacup of Sweet Corn. (optional).
* Vegetables oil.
* 1 Onion.
* 1½ Tablespoonful Grounded Crayfish. (optional).
* 2 Stock Cube.
* Scotch Bonnets Peppers. (to taste).
* Salt.

Before cooking your Jollof Spaghetti.

* Wash or Rice all the cooking utensils you want to use.
* Set your Stew aside if you have, but if you don't, prepare your stew,

* Wash and Chop your Carrots into pieces and set aside.
* Chop your onion.
* Use hand blender to blend Scotch Bonnets Peppers, but note : it shouldn't be smooth it should be coarse blending without adding any water to it.
* Ground or Blend or Pound your Crayfish.

COOKING DIRECTIONS :

1. Set up your cooker or stove, and place your cooking pot, then pour some water to boil, when it boil to about 85°c add the spaghetti and cover for short periods of time like about 3 to 4 minutes to parboil your spaghetti.
2. After 3 to 4 minutes, low down your cooker or stove and pour your parboiled spaghetti into a sieve to drain out the water, and pour into another cold water blow.

Note : This parboiling method is to help to extract the excess starch in your spaghetti, but you can leave it out if your brand of spaghetti has a low starch content.
3. Place a new pot for your cooking and add the meat or fish or chicken stock, or water if you don't have any stock. Pour the prepared stew into the stock and leave to cook for short period of time.

Note :1, if want your jollof spaghetti to really stewy, you can keep aside a cooking spoonful of the stew for later use.

Note :2, The meat or fish or chicken stock, or water shouldn't be more than 2 to 3 teacups, because you you haven't know the level of your Parboiled Spaghetti.

4. After a short period of time, add the following to your cooking ;

* Parboiled Spaghetti,
* Vegetable oil,
* Grounded Crayfish "optional",
* Stock Cube,
* Salt,
* Blended Scotch Bonnets Peppers.

Now that you have got the level of your Parboiled Spaghetti, add more stock water or ordinary water to your cooking and cover it to cook for 5 minutes on low medium heat.

Note : The stock water or ordinary water shouldn't be up to the level of your spaghetti. If not your cooking will end up stick together.

5. After 5 minutes, by then all the liquid should have dried or almost dried, now add the remaining left aside stew to it, and cover the pot to simmer for like 1 minute or less, now mix and turn it in a cooling blow. And now you are done with the cooking of your Jollof Spaghetti, and it ready to serve.

Peppered Chicken has always taking over other snacks and meals. I can say peppered chicken is the best snack ever till date. When you have a VIPs and you haven't parpare any food, you can serve them with pepper chicken and soft drinks if there is. Even if you are watching home movies or news you can be having your pepper chicken and soft drinks as well.
You can also serve with any kind of rice recipes, beans recipes, and others recipes as well. Most people use it in addition to their parties food.

INGREDIENTS::

* Full Chicken or Chicken Laps.
*  Tatashe Peppers.
* Habanero Peppers.
* 1½ Onions.
* Stock Cubes.
* Thyme.
* Salt.

Things you should Notes on the INGREDIENTS.

1. Using "Hen" that is hard chicken, is much better than using "Cockerell" or "Roosters", because it has more richer taste.
2. It's called Tatashe peppers in Nigerian, but in other countries it's called different types of names. In Spain it's called Pimentos Tribelli Pepper. It add more colors to your meal.
3. The Habanero Peppers, it's also called Scotch bonnet Peppers. Even in Nigerian it's called different types of name by different types of region, most call it  atarodo, atarugu, ose oyibo etc....... It's to add more spicy hot to your meal. But If you do not like spicy hot food, you
can use only tatashe.
4. Chop all the onions and divide into two equal parts, one part is for the cooking of the chicken, while the other is for the ornamental.

Before you proceed the preparation of the Peppered Chicken.

1. Chop Tatashe and Habanero Peppers, you may remove the seeds "optional". And you can even use hand blender to blend it, but note : it shouldn't be smooth it should be coarse blending without adding any water to it.

2. Wash your chicken. Chop into desireable and uniform sizes, and place into a cooler, then add the thyme, chopped onions and stock cubes (crushed). spray the seasoning and spices into the chicken with your hands, then
cover it and put in the fridge to marinate for at least 45 minutes.
* Before your get marinated, you can go on preparing other things.

DIRECTIONS:

1. After 45 minutes or less when your chicken has been marinated, pour it into the pot, and get it ready to cook by setting up your cooker or stove, place the pot on the cooker or stove and cook it for 15 minutes or less. Note ; you don't need to add much much amount of water to your cooking because you have already marinated it, by the time it started to boil, water will leak out from the chicken.

2. After 15 minutes, check out your chicken, if is done. Remove them one after the other and place them in the oven and set it to  150°c "250F" till it turns golden all over. Now if you are preparing another meal like Jollof Rice to serve your Peppered Chicken, go on and start the preparation with the use of the chicken stock "water from the cooked chicken", but if you not. You just prepare the Peppered Chicken for snacks and serve with a orange juice or wine or soft drink. Now you can freezer the chicken stock.

3. Now set your cooker or stove and place your frying pan and pour the vegetable oil to heat up.

4. Now add your blend pepper, salt and start frying till all the water dries up.

5. Add the grilled chicken and start stirring, stir it very well with a turner till it turns out red, and make sure the peppers have coated every inch part of the chicken.
Now your chicken is done and ready to eat with any kind of recipes or juice or wine.

Catfish popularly called " POINT and KILL" pepper soup is the most commonly pepper soup you will found in almost all the restaurant in Africa.
Mostly in Nigeria it called " POINT and KILL", It’s a usual thing when you get to any Bar or Restaurant, you hardly find a prepared catfish pepper soup, you will be the one to point to a lifely catfish of your choice and it will be killed and prepared for you. Catfish in Africa is now a big deal business, nowadays many people are into cultivation and sells for earning income purposes.


INGREDIENTS::


* Lifely or Fresh Catfish.

* 2½ Seeds of Calabash Nutmeg (Monodora myristica).

* Habanero Pepper.

* Scent Leaves or 1½ Tablespoons of dry uziza.

* 2 Medium Onions.

* Salt.

* 2 Stock Cubes.

* Cray fish.

Before you proceed, the cooking of your Goat Meat Pepper Soup. Note ;

* Cut the fish to 2 or 3 or any pieces of your choice and pour into bowl and wash properly like 2 to 3 times.

* Chop the Habanero Pepper into pieces or pound it.

* Chop your onions and set it aside.

* Select the leaves of the scent leaves and wash the it. If using dry uziza, rub with your palm to break them into pieces.

* Blend or Crush the Cray fish. {optional}

* Heat the calabash seeds for like 2 to 3 minutes, remove it and peel it to get the
inside content. Put it together and pound or crush it in a mortal and set it aside.


DIRECTIONS :


1. Set your cooker or stove, place your pot on the cooker or stove and pour your cut catfish and some water to heat the fish to boiling for like 5 minutes.

2. After 5 minutes the fish should have been harder, remove all the fish from the pot one after the other, to avoid collapsed during the cooking, and place in a bowl.

3. After that add the following to the fish stocks ;

Chopped Onions,

Chopped or Pound Habanero Peppers,

Saint Leaves,

Stock Cube,

Salt,

Blend or Crush Cray fish,

And

Pound or Crush Calabash seed.

And cover it to cook for about 4 minutes.

4. After 4 minutes, picks the fish one after another and put in the stock then cover it and leave to cook for about 5
minutes. After 5 minutes you are now done with the Preparation of the Catfish Pepper Soup.
You can now serve and enjoy it any soft drinks or juice or wine and you will
never forget the enjoyment.

How To Prepare Beans Soup Called Gbegiri.

Gbegiri is one of the Western Nigerian Soup, that is the Yoruba's Gratification Soup. Gbegiri is prepared with beans, gbegiri is a self soup on is own, but most people keep it lifely by adding meat or chicken stew with ewedu soup.

INGREDIENTS; needed for the Gbegiri Soup.

* 2 Milk Cups of White or Brown Beans.

* 1 Tablespoon Grounded Crayfish (optional).

* 1 Stock Cube.

* ½ Cooking Spoon of Palm Oil.

* 1 Teaspoon of Dry Grounded Pepper.

* Salt.

Note : Do the peelings of the beans coat and soak in warm water for about an hours. This process is 
to make the beans to be more softer so as for the cooking to be faster and easier. With this process you will not need to add potash to the cooking of your beans.

Cooking Steps.

1. Set up your cooker or stove and place number 2 pot on it, pour the peeled soaked beans into it.

2. Add water to it and cover to cook on a low medium heat for about 45 minutes.

Note ; your water most be of the same level with the beans or about some meter above the beans and you will need to top up the water from time to time but make sure the water is always at the same level to the beans.

3. While the beans is set on cooking, you may go ahead preparing the Ewedu Soup.

4. Make sure that the beans is probably cook till they become stick together and mash.

5. After all the beans has mash very well, pour into a sieve and use spoon to exact more pressure on it to make it smooth and filter out all the smooth one. As I did it in this "click here to view ". And you can even use other methods, such as making use of the Potato Masher, Blend etc.....

6. After you have filter out all the smoother one, now add the following;

* Dry Grounded Pepper,
* Grounded Crayfish,
* Stock Cube,
And,
* Palm Oil.

Half cover your pot and continue cooking at low medium heat for about 1½ minutes or till the oil blends with all the ingredients including the smooth beans.

7. Now stir till the smooth beans and the other ingredients change to yellow.

8. Now you are done with the cooking of the Beans Soup known as Gbegiri Soup.
Serve with Ewedu Soup and Beef & Chicken Stew and enjoy with the white Amala.

Preparing Beans Porridge is a popular meal, in the sense that it's associated with two things which are INDIGESTION and FLATULENCE. Many people don't eat beans because after eating it they started developing a running stomach or stomachache, which normally happen to me also, when ever I eat only beans. Not even only porridge beans, including Moi Moi, Akara... And many other things prepared with only beans. Every single body's have one reason or the other, why they don't eat Beans, but with this cooking steps will help you to eliminate all the problems associated with beans, which has helped me a lot. "Yet", with each body reasons, it's still one of the body building food. That why it's advisable to have beans in the families menu especially when you have mostly the young ones in your family.

INGREDIENTS :
* 2 Cups Brown Beans.
* Palm oil.
* 2 Medium Onions.
* Dry Grounded Pepper.
* Salt.
* 1 Stock Cube.
* 200g of white or yellow Yam."Optional"
* Ripe Plantain.
* Grounded Crayfish.

Useful Notes ;

1. Parboil the beans and pour in cold water or soak the beans in warm water for about 4hours, after 4hours do the changing of the water and pour into a blow to rinse it, then set aside.

3. If you are using grounded crayfish then you don't stock sube.

4. If you will using yam peel and rinse, then chop into inch cubes and set aside.

5. Peel your ripe plantain and chop into 4 and set aside.


DIRECTIONS :

1. Set up your cooker or stove and place your pot on it, pour the beans into it, add your chopped onions and yam, then add water to it and start cooking.

Note : your water level should be the same with the level of the beans, and make sure you check out the cooking from time to time, because of the water level. You should always keep the water at the same level as the beans so that when the beans porridge done, you will not have beans and water separate.

2. When the beans is soft, add the following ingredients to it,

Grounded Crayfish,
Dry Grounded Pepper,
Ripe Plantain
Salt,
Stock Cube,
Palm oil.
stir very well till the palm oil changes to
deep yellow.

Note : You may not add the Stock Cube, if you are still using Grounded Crayfish.

3. After stirring very well, and it has changes to deep yellow. Cover and cook on low heat for 5 minutes and by then, it is ready to be served.

Note : The porridge will look watery at this time, but it gets thicker when it has cooled down

Peeled Beans Porridge is another way you can keep your families menu. Some people don't usually eat the classic beans porridge, just because of one reason or another. But the peeled beans porridge is a great meal for adults and kids and it's lovely.

INGREDIENTS :

* 2 Milk Cups Beans Brown.
* 2 Cooking Spoons of Palm Oil.
* 2 Tablespoonfuls of Grounded Crayfish.
* 1½ Medium Onions.
* Dry Grounded Pepper.
* Salt.
* 1 Stock Cube.


NOTES :

1. Peel the beans to remove the beans coat. If you would like to know how to remove beans coat click here
2. Chop the onions.
3. Always cut your clothes according to your sizes. This means any ingredients I say use one or two or three, always have it in mind that am preparing for just a body food so you should always do increase in your ingredients.



DIRECTIONS ;


1. Set up your cooker or stove and place your pot on it, pour the peeled beans into it, add your chopped onions then add water to it and start cooking.

Note : your water level should be the same with the level of the beans, and make sure you check out the cooking from time to time, because of the water level. You should always keep the water at the same level as the beans so that when the peeled beans porridge done, you will not have beans and water separate.
